What Exactly is Bison Meat?
By Keith Donegan

Bison is just another word for buffalo. People have been eating buffalo meat for years, probably ever since explorers arrived in America and saw just how plentiful this animal was. Its way of life was very much like that of a cow so it was easy enough to learn to like its meat.

Today, bison meat is making a comeback - though on the supermarket shelves. The reason probably is that here is a red meat alternative that is low in cholesterol, low fat and low in calories. With bison not becoming a mass-produced meat though it is plentiful, it is a healthier meat to have, being free range and grazing in the open for the most part and being free of hormones and antibiotics. The meat has a sweetness and is filled with flavor and there are a number of restaurants both in the US and Canada that have started serving various delicious dishes made from this meat. And because it is denser than beef, you end up eating less of it.

Bison meat or Buffalo meat could well be the meat of the future and one way to get out of the vicious cycle of hormone and antibiotic laden beef. Considering the fact that more people are becoming aware of the dangers of these substances in meat, one would think and hope that bison meat gains in popularity soon.

There are stores online where you could order your bison meat. Take a look at the calorie count and maybe if you would like to count your calories, this is one meat to order rather than go off meat altogether. And the ones who have tasted it feel that it's a meat that is tasty and tender.

Buffalo Meat - Healthy Or Hype
By Bobby Moseley

Buffalo meat has, over the past 5-10 years, become well known as a healthy alternative to beef. Media mogul Ted Turner has even opened a restaurant, Ted's Montana Grill, based on this premise. Cuts of buffalo meat are now available at many grocery stores, with more likely to follow. The big question is, does buffalo meat really merit this standing? Or has marketing hype once again trumped solid information and common sense?

I'm going to suggest it's a bit of both. Buffalo meat is leaner than beef when cut, trimmed, and prepared exactly the same way. But therein lies the problem.

Let's start by look at some numbers. Statistics may be a tad boring, but they're an important determinant in the quality of our conclusion. Per the USDA's nutrient data laboratory free-range, top round, cooked buffalo meat contains approximately 11% fat calories. Free-range refers to the fact that the animal was raised on the open plain and allowed to roam free. 11% of calories from fat is pretty darn lean, I'd say. There are no numbers for free range beef in the database to compare with, but even chicken breast, one of the gold standards of lean meat, is somewhere in the 15-20% fat calorie range. So far, so good for buffalo meat's lean status.

In order to dig further into the truth, we really need to clarify our terms. What type of cut are we talking about? How was it prepared by the butcher and how much fat was trimmed off before being cooked or ground? How was the animal raised? The leanness of a cut of meat really, truly depends on these factors. We can't assume that all buffalo meat available at the grocery store or restaurant is prepared the same way as described above.

When we begin to ask and answer these questions, some interesting information comes to light. The same USDA nutrient database says that 95% lean (by weight, not calories) raw ground beef contains 32% fat calories, while regular ground bison contains a whopping 64% of fat calories. Both are ground, but buffalo has double the fat in this example simply because it was prepared differently!

If we compare beef top sirloin, trimmed to 0% visible fat, then broiled, you'd get 31% of your calories from fat. A 1-inch top sirloin steak from a bison, broiled, contains 30% fat calories. These number are comparable, again simply because of how the meats were processed.

Let's now look at some numbers directly from Ted's Montana Grill. A quick analysis shows that this restaurant must not use much in the way of lean cuts of buffalo meat. Check out the restaurant's nutrient guide for yourself. Only 3 of his 10 salads or entrees that contain bison come in at less than 30% fat calories. The average of all 10 salads is a whopping 46% fat calories. His burger comes in at a hefty 57% fat calories. Remember, as I mentioned above 95% lean ground beef is a comparatively healthy 32% fat calories.

Hopefully you are getting a sense of the point I'm trying to make. Because something simply says 'buffalo meat', you can't assume that it's necessarily lean. If it was raised and prepared right, then might be okay. If not, your arteries won't know the difference between fatty beef and fatty buffalo. My advice is to get the facts for yourself and learn to read labels and nutrition information. Don't rely on the product's salesman to do it for you.

Buffalo ~ Healthy Never Tasted Sooo Good!
By Sandy Morris

Better eating habits such as choosing Buffalo instead of beef has many health improving features and healthy never tasted so good. Although changing eating habits is generally reserved for the Baby Boomer age bracket younger people and children are becoming more aware of the alternatives to just eating junk food. With the number of obese increasing each day medical practitioners and authorities have begun recommending alternatives such as buffalo to their clients. Lower fat content is one of the many benefits derived from eating buffalo. Cooking time is greatly reduced and the flavor is excellent. Many upper scale restaurants are now offering buffalo as a choice of meat giving you alternatives when dining out. Buffalo was even a meat choice featured on Hell’s Kitchen TV Show just last evening. Recently visiting a northern Maryland bison ranch sparked my interest in providing better alternatives and creative ways of improving what we eat. Take a moment and follow the slides of my trip. I must warn you that some of the photos will be disturbing because the animals were in the process of shedding their winter coats. They have not been mistreated in anyway. As you will see rolling in the dirt helps them remove the longer winter coat but that generally takes them a few days. As I looked out over the hillside with the buffalo roaming in the pastures I was captivated by their beauty and yet fearful of their powerful strength. An average weight of 1500 pounds is not uncommon for these beautiful animals. Buffalo is steadily growing as an healthy alternative food source and the continued growth has allowed the operation of farms across the United States. Morris’ Choice Bison Ranch was originally an Angus beef farm for a number of years before switching to Buffalo. Buffalo Rob, as I call him, has developed many innovative farming methods to maintain and grow his herd. He explained that he is striving to grow his Buffalo in as natural organic setting as possible. And I must say that was easy to see. Buffalo meat can be shipped anywhere in the Continental United States. The baby boomer generation has taken to choosing it as an alternative to the meat products available and local farms such as Morris’ Choice Bison Ranch have begun to fill their requests.
